Best Blueberry Bake Recipe for a Warm and Fluffy Breakfast

blueberry bake

This warm and fluffy blueberry bake combines sweet, tangy blueberries with a soft texture, making it the perfect breakfast treat for cozy mornings or brunch gatherings.

Ingredients

Scale
  • 1 1/2 cups (190g) all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60g) melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup (180ml) whole milk
  • 1 1/2 cups (200g) blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a large mixing bowl, combine 1 1/2 cups (190g) of all-purpose flour, 2 teaspoons of baking powder, and a pinch of salt. Whisk to combine.
  3. In a separate bowl, whisk together 1/2 cup (100g) of sugar, 1/4 cup (60g) of melted butter, 1 large egg, 1 teaspoon of vanilla extract, and 3/4 cup (180ml) of milk.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix—some lumps are okay!
  5. Gently fold in 1 1/2 cups (200g) of blueberries. Pour the batter into the prepared dish, spreading it evenly.
  6. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Let the bake cool for 10 minutes before serving. Enjoy warm with a dusting of powdered sugar or a dollop of whipped cream!

Notes

For extra flavor, add a pinch of cinnamon or lemon zest to the batter. If the top browns too quickly, cover it loosely with aluminum foil during the last 10 minutes of baking.
