  • 1 teaspoon (5g) baking powder

  • 6 tablespoons (85g) cold unsalted butter
  • 1/2 cup (120ml) milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine 4 cups (600g) fresh blueberries, 1/4 cup (50g) granulated sugar, 1 tablespoon (15ml) lemon juice, and 1 tablespoon (8g) all-purpose flour. Stir until the blueberries are coated evenly.
  3. Pour the blueberry mixture into your prepared baking dish, spreading it out evenly.
  4. In another mixing bowl, whisk together 1 cup (120g) all-purpose flour, 1/4 cup (50g) brown sugar, 1 teaspoon (5g) baking powder, and a pinch of salt. Cut in 6 tablespoons (85g) cold unsalted butter until the mixture resembles coarse crumbs.
  5. Stir in 1/2 cup (120ml) milk until the topping comes together into a thick batter.
  6. Drop spoonfuls of the topping over the blueberry filling, leaving some gaps for steam to escape.
  7. Place the dish in the oven and bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
