Blackberry Jam Thumbprint Cookies

  • 1 cup (225g) unsalted butter, softened
  • 2/3 cup (130g) granulated sugar
  • 2 egg yolks
  • 1 teaspoon (5ml) vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/4 teaspoon (1g) salt
  • 1/2 cup blackberry jam (approximately, for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar using an electric mixer until light and fluffy, about 3 minutes.
  3. Add the egg yolks and vanilla extract, mixing until fully incorporated.
  4. Gradually add the flour and salt, mixing until the dough comes together. It should be soft but not sticky.
  5. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Using your thumb or the back of a small spoon, press a deep indentation into each dough ball.
  7. Spoon about 1/2 teaspoon of blackberry jam into each thumbprint.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack.

Notes

Chill the dough for 15-20 minutes if your kitchen is warm to help the cookies hold their shape. Use high-quality or homemade blackberry jam for the best flavor.
