  • 1/3 cup (65g) granulated sugar
  • 1 tablespoon (14g) baking powder
  • Pinch of salt
  • 1/2 cup (115g) cold, unsalted butter, cut into small cubes
  • 1/2 cup (120ml) heavy cream, plus extra for brushing
  • 1 large egg
  • 1 tablespoon (15ml) lime juice
  • Zest of 1 lime
  • 1 cup (150g) blackberries
  • Coarse sugar for sprinkling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter cubes and use a pastry cutter or your hands to combine until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the heavy cream, egg, lime juice, and lime zest.
  5. Pour the wet ingredients into the dry mixture and gently stir until just combined. Be careful not to overmix.
  6. Fold in the blackberries gently to avoid crushing them.
  7. Turn the dough out onto a floured surface and pat it into a circle about 1-inch thick. Cut into 8 wedges.
  8. Place the scones on the prepared baking sheet and brush the tops with a little heavy cream. Sprinkle with coarse sugar if desired.
  9. Bake for 18-22 minutes, or until the scones are golden brown. Let them cool on a wire rack for 5 minutes before serving.

Notes

Keep your ingredients cold, especially the butter, to ensure flaky scones. Avoid overmixing the dough to prevent tough scones. Handle the blackberries gently to avoid crushing them.
