This Blueberry Cottage Cheese Breakfast Bake is a healthy, protein-packed breakfast option bursting with the sweetness of blueberries and the creaminess of cottage cheese. Perfect for busy mornings or leisurely brunches.

  • 1 cup (240g) cottage cheese
  • 1 cup (150g) fresh or frozen blueberries
  • 2 large eggs
  • 1/4 cup (60ml) honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup (50g) rolled oats
  • 1/4 cup (30g) almond flour
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a medium bowl, whisk together cottage cheese, eggs, honey or maple syrup, and vanilla extract until smooth.
  3. In another bowl, mix rolled oats, almond flour, and cinnamon (if using).
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  5. Gently fold in the blueberries, reserving a few for sprinkling on top.
  6. Spread the batter evenly into the prepared baking dish and top with the reserved blueberries.
  7. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Let the bake cool for 5-10 minutes before slicing. Serve warm.

Notes

For best results, use room temperature ingredients and grease the baking dish well. If using frozen blueberries, toss them in a little flour before adding to the batter to prevent sinking.
