Blueberry Heaven Cookies

Soft, fruity cookies bursting with juicy blueberries, complemented by hints of vanilla and lemon. Perfect for a comforting dessert or sweet snack.

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of one lemon (optional)
  • 1 cup (150g) blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a larger bowl, beat the butter and sugar until light and fluffy, about 2 minutes.
  4. Beat in the egg, vanilla extract, and lemon zest (if using) until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Gently fold in the blueberries using a rubber spatula.
  7. Scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Each cookie should be roughly 2 tablespoons of dough.
  8. Bake for 10-12 minutes or until the edges are lightly golden. The centers should still look slightly soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For best results, use cold blueberries to prevent them from bursting during mixing. If the dough feels too sticky, chill it for 15-20 minutes before baking. Sprinkle sea salt on top before baking for a sweet-and-salty twist.
