  • 3 cups (450g) raspberries (fresh or frozen)
  • 1 ½ cups (190g) all-purpose flour
  • 1 cup (90g) rolled oats
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • ¾ cup (170g) unsalted butter, cold and cubed
  • 2 tablespoons (30ml) lemon juice
  • 2 tablespoons (15g) cornstarch
  • A pinch of salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine the all-purpose flour, rolled oats, granulated sugar, brown sugar, and a pinch of salt. Add the cold, cubed butter and use a pastry cutter or fork to mix until crumbly. Reserve 1 cup of the crumble mixture for the topping.
  3. In another bowl, toss the raspberries with lemon juice, cornstarch, and granulated sugar. Stir gently to coat.
  4. Press the remaining crumble mixture into the prepared baking dish to form the crust. Spread the raspberry filling evenly over the crust, then sprinkle the reserved crumble on top.
  5. Bake for 35-40 minutes, or until the top is golden brown and the raspberries are bubbling.
  6. Let the bars cool completely before lifting them out of the dish and slicing into squares.

Notes

For best results, use cold butter to achieve a crumbly texture. Allow the bars to cool completely before slicing to ensure neat squares. You can use frozen raspberries straight from the freezer to avoid excess moisture.
