  • 1 ½ cups (150 g) graham cracker crumbs
  • ¼ cup (50 g) granulated sugar
  • 6 tbsp (85 g) unsalted butter, melted
  • 24 oz (680 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120 ml) sour cream
  • 1 cup (125 g) fresh raspberries
  • ¼ cup (50 g) granulated sugar
  • 2 tsp cornstarch
  • 2 tbsp (30 ml) water

Instructions

  1. Preheat your oven to 325°F (163°C). Grease your springform pan and line the bottom with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture evenly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
  3. In a small saucepan, combine raspberries, sugar, cornstarch, and water. Cook over medium heat until the raspberries break down and the sauce thickens (about 5-7 minutes). Strain through a fine-mesh sieve to remove seeds, then set aside to cool.
  4. Beat cream cheese and sugar together until smooth. Add eggs one at a time, mixing after each addition. Stir in vanilla extract and sour cream until fully combined.
  5. Pour half the filling over the crust. Dollop half the raspberry sauce on top and swirl using a wooden skewer or knife. Repeat with the remaining filling and sauce.
  6. Place the cheesecake in the oven and bake for 55-60 minutes, or until the edges are set and the center jiggles slightly when shaken. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.

Notes

Ensure all ingredients are at room temperature for a smooth filling. Avoid overmixing to prevent cracks. Let the cheesecake chill overnight for the best texture.
