Rustic Blueberry Galette

A simple and stunning dessert featuring warm, bubbling blueberries wrapped in a flaky, golden crust. Perfect for seasoned bakers and beginners alike.

  • 2 cups (300g) fresh or frozen blueberries
  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (8g) cornstarch
  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 cup (114g) unsalted butter, cubed and cold
  • Pinch of salt
  • 34 tablespoons (45-60ml) ice water
  • 1 egg, beaten
  • 1 tablespoon (15ml) water
  • Turbinado sugar (optional, for sprinkling)

Instructions

  1. Combine 1 1/4 cups (156g) all-purpose flour, 1/2 cup (114g) unsalted butter (cubed and cold), and a pinch of salt in a mixing bowl. Use a pastry cutter or your fingers to blend until crumbly. Add 3-4 tablespoons (45-60ml) ice water, one tablespoon at a time, until the dough comes together. Wrap it in plastic and chill for 30 minutes.
  2. In a bowl, mix 2 cups (300g) blueberries, 1/4 cup (50g) granulated sugar, 1 tablespoon (15ml) lemon juice, and 1 tablespoon (8g) cornstarch. Stir gently to coat the berries.
  3. On a floured surface, roll the chilled dough into a rough 12-inch (30cm) circle. Don’t stress about perfection – rustic is the goal!
  4. Transfer the dough to a parchment-lined baking sheet. Spoon the blueberry filling onto the center, leaving a 2-inch (5cm) border. Fold the edges over the filling, crimping as you go.
  5. Brush the crust with a beaten egg mixed with 1 tablespoon (15ml) water. Sprinkle turbinado sugar on top if desired.
  6. Preheat your oven to 375°F (190°C). Bake for 40-45 minutes, or until the crust is golden and the filling is bubbly.
  7. Let the galette cool for 15 minutes before slicing. Serve warm or at room temperature.

Notes

Keep the dough cold for a flaky crust. Add a pinch of cinnamon or a splash of vanilla extract to the filling for extra depth. Sprinkle turbinado sugar on the crust for added crunch.
