  • 2 egg yolks

  • 1/2 cup strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy using a mixer.
  3. Add the egg yolks and vanilla extract to the mixture and beat until well combined.
  4. Gradually add the sifted all-purpose flour to the wet ingredients, mixing until a smooth dough forms.
  5. Chill the dough in the refrigerator for 30 minutes to make it easier to handle.
  6. Roll out the chilled dough on a floured surface to about 1/4-inch thickness.
  7. Use a cookie cutter to cut out shapes and place them on a baking sheet lined with parchment paper.
  8. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool completely on a cooling rack.
  10. Spread strawberry jam on the flat side of one cookie and sandwich it with another cookie. Repeat for all cookies.

Notes

Chill the dough before cutting to prevent sticking. Use alternative jams or decorations like sprinkles or chocolate drizzle for customization.
