  • 1 cup (230 g) unsalted butter, room temperature
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 teaspoon (5 ml) vanilla extract
  • 2 1/2 cups (315 g) all-purpose flour
  • 1 teaspoon (4 g) baking powder
  • 1/4 teaspoon (1 g) salt
  • 1/2 cup strawberry jam (thick and high-quality)

Instructions

  1. In a mixing bowl, cream together 1 cup (230 g) of unsalted butter and 1 cup (200 g) of granulated sugar until light and fluffy (about 3 minutes). Add 1 large egg and 1 teaspoon (5 ml) of vanilla extract, mixing until well combined.
  2. In a separate bowl, whisk together 2 1/2 cups (315 g) of all-purpose flour, 1 teaspoon (4 g) of baking powder, and 1/4 teaspoon (1 g) of salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to make it easier to handle.
  4. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  5. Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Spread a thin layer of strawberry jam evenly over the dough. Roll the dough into a log and cut into 1/2-inch slices.
  6. Place the slices on the prepared baking sheets. Using a toothpick or skewer, swirl the jam slightly for a marbled effect. Bake for 12-14 minutes or until the edges are lightly golden.
  7. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the dough to prevent spreading during baking. Use thick jam for clean swirls. Avoid overbaking to keep cookies soft and tender.
